Both the dish and the sake are full-bodied, creamy and dense. The crispy fried sweetbread is buttery and provides plenty of umami – a perfect partner for the Hatsumago Kimoto Tradition. The sake also comes with a dense, soft texture, pleasantly creamy, similar to the sweetbread with a subtle but balanced sweetness. The subtle lactic acid complements the sherry sauce wonderfully and at the same time breaks through the intense earthy-sweet flavour of the lentils. The pickled celery serves as an extension of the sake. Raw and crunchy, it simultaneously emphasises the pleasantly subtle bitter notes of the sake. To balance it out, the sake enhances and lifts the dense umami notes of the mushroom cream with porcini powder. Almost incidentally, the parsley crumbs serve as a tactile plaything, but in combination also promote the almost meaty character of the sake. Raw slices of mushroom reset the taste buds and remind you of forest floor.
