Also certified kosher, the IWC winner (2017) Nanbu Bijin Junmai Ginjō harmonises perfectly with the marinated halibut, as it has been marinated for 24h, with a marinade of Nanbu Bijin, fennel seeds, orange zest and poached shallots. The creamy texture and light buttermilk flavours cushion the subtle spiciness of the miso paste. The fresh acidity of the sake makes the higher-fat halibut seem lighter and, with its fresh aromas of eucalyptus, blends beautifully with the taste of the marinade. Equally balanced is the combination of the eucalyptus roll and the Nanbu Bijin. Here, too, the fresh eucalyptus note in the roll plays an important role together with the buttermilk & the light exotic flavours of the sake. The Greek yoghurt espuma also perfectly matches the texture and flavour of the sake. The buttermilk dashi stock gives the dish additional flavours of fresh basil and dill.
