Nanbu Bijin Breweries' Southern Beauty jumps out of the glass with some classic but improved junmai notes. Pear, honeysuckle and burdock really balance out the bouquet. On the palate, a crisp and clean reminder of the Iwate region with a subtle acidity and subtle dryness. Paired with briefly seared Kagoshima Kobe beef rib caps resting on sake-pickled oysters. The oysters coated in celeriac on a bed of ponzu gel and celeriac puree. The hint of residual sugar in the Southern Beauty balances the saltiness of the French oysters and caviar. The fruity pear notes then enhance the umami of the seared Wagyu, leaving a very delicate harmony between these two ingredients. This sake is best enjoyed in a white wine glass at a pleasant 10 degrees. With the help of the strong celery, the soft oyster and the fatty Kobe, the velvety sake harmonises with this dish in texture.
