The dish itself has an elegant, delicate aroma that is very typical and traditional for Japanese cuisine, where sake is also traditionally served. You should have every component of the dish on your spoon and enjoy it together with the ginjō sake. Just like the dish, the ginjō sake “Cherry Blossom” is delicate and does not overpower the raw marinated bluefin tuna. The sake brings a light supporting freshness that perfectly rounds off the marinated tuna. In principle, the mouthfeel is very harmonious, one tastes the individual main components, which, however, do not match but support each other and are again emphasised and literally carried by the sake. Especially the bluefin tuna fish benefits excellently from the sake, because it is carried forward a bit more. The subtle umami notes from the dish and sake also bring a long finish. A beautifully light fine dish with the elegant sake to match.
