Shellfish and sake make an excellent combination. The carrot very much dominates the flavour of the dish. The slight spiciness in the stock needs a sweetness in the sake for a harmonious correspondence. This results in a creamy and exciting texture. Due to the puristic, tart carrot cream, you need an aromatic, fragrant sake, which the Katsuama Lei brings with it thanks to the rice variety Hitomebore and a Seimaibuai/polishing degree of 55%.
