2013 UNESCO declares Japanese cuisine (Washoku) an intangible cultural heritage. Sake then to washoku & kakuni? We write the year “R4BY”, Reiwa time, “beautiful harmony”, which I also chose for the 2nd pairing. From 5 sakes, we found THE perfect companion to the juicy, salty pork belly. An excellent emulsifier, suitable to dissolve, break down the (tender) fat. Abundant amino acid, without any edges, emphasises the heartiness. Viscosity increases as Amabuki warms in the mouth & harmonises with the spicy pork belly & nutty Jerusalem artichoke notes on the palate. The dry prelude is accompanied by creaminess in the middle section. It should be noted that Amabuki holds up to the salty pairing. A beautiful example of how the roundness of umami finally echoes out in a subtle melon finish. Great dance partner that plays all flavours, including a hint of fruitiness. You will be happy as a pig in the mud & you will enjoy it.
