Through stories of Japanese gods enjoying sake by the river in Shimane, my interest was piqued. Stories about chocolate go back centuries in South, Central America and Africa, claiming it is a food of the gods and a sacred ingredient. Appropriately for Christmas time, my dish, a sun filled with a praline mousse of white chocolate, with stewed Japanese fruit in rum, called “sun” in the local dialect. Served with cinnamon crêpes. Caro Pink blossoms on the nose with a bouquet of lavender, rose water and delicate white lilies. Followed by a pleasantly surprising hint of residual sugar & sweet melon. The lychee adds a slight acidity that helps keep the sake from being too sweet. Coffee and chocolate go perfectly with the white chocolate sun and the rum fruit is balanced by the acidity in watermelon and lychee. Served in a Burgundy glass chilled to about 8 degrees, a wonderful experience.
